Veg cutlet is a popular Indian snack made with a mixture of mashed vegetables, spices, and breadcrumbs. It is crispy on the outside and soft on the inside, making it a delightful tea-time or evening snack. Here is the recipe with cooking time, prepare time, ready time, and ingredients:
Cooking time: 20 minutes
Prep time: 15 minutes
Ready time: 35 minutes
Ingredients:
- 2 cups boiled and mashed potatoes
- 1 cup mixed vegetables (carrots, peas, beans, corn), finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1-inch piece of ginger, grated
- 2 tablespoons chopped coriander leaves
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- Bread crumbs for coating
- Oil for frying
Instructions:
- In a large bowl, combine mashed potatoes, chopped vegetables, onions, green chilies, grated ginger, chopped coriander leaves, cumin powder, garam masala, red chili powder, turmeric powder, and salt. Mix well to form a dough-like mixture.
- Divide the mixture into equal-sized portions and shape them into flat round patties.
- Coat each cutlet with breadcrumbs, ensuring it is evenly coated on all sides. This will give them a crispy texture when fried.
- Heat oil in a frying pan or skillet over medium heat.
- Carefully place the cutlets in the hot oil and fry them until golden brown and crispy on both sides. Flip them gently to ensure even cooking.
- Once cooked, transfer the cutlets to a paper towel-lined plate to remove excess oil.
- Serve the veg cutlets hot with mint chutney, ketchup, or any dipping sauce of your choice.
Note: You can also bake the cutlets in a preheated oven at 180°C (350°F) for about 20-25 minutes or until they turn golden brown.
