Ingredients:
  • 500 grams squid (cleaned and cut into rings)
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste
  • Oil for frying
For the Marinade:
  • 2 tablespoons yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
For Garnish:
  • Fresh coriander leaves (chopped)
  • Lemon wedges
Instructions:
  1. In a mixing bowl, combine the squid rings with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, lemon juice, and salt. Mix well to coat the squid evenly. Let it marinate for about 15-20 minutes.
  2. In another bowl, whisk together yogurt, lemon juice, red chili powder, turmeric powder, and salt to make the marinade.
  3. Add the marinated squid to the yogurt marinade and mix well. Let it marinate for an additional 10 minutes.
  4. Heat oil in a frying pan or skillet over medium heat.
  5. Once the oil is hot, carefully add the marinated squid rings to the pan, ensuring they are evenly spread out. Fry them in batches to avoid overcrowding the pan.
  6. Cook the squid for about 2-3 minutes on each side or until they turn golden brown and crispy. Be careful not to overcook as squid can become chewy if cooked for too long.
  7. Remove the fried squid from the pan and place them on a paper towel-lined plate to drain excess oil.
  8. Repeat the frying process with the remaining batches of squid until all are cooked.
  9. Garnish the fried squid with freshly chopped coriander leaves and serve hot with lemon wedges.

Note: You can adjust the spice levels by increasing or decreasing the amount of red chili powder according to your preference.
