Paneer fried rice is a delicious and satisfying dish that combines the nutty and savory flavors of fried rice with the creaminess and richness of paneer, a type of Indian cheese. Here’s a simple recipe for making paneer fried rice at home:

Ingredients:
  • 2 cups of cooked basmati rice (preferably cooked and cooled the day before)
  • 1 cup of paneer, cubed
  • 1 onion, chopped
  • 1 capsicum (bell pepper), chopped
  • 1 carrot, chopped
  • 2-3 cloves of garlic, minced
  • 1 tsp of ginger paste
  • 1-2 green chillies, chopped (optional)
  • 2-3 tbsp of vegetable oil
  • 1 tsp of cumin seeds
  • Salt to taste
  • 1/2 tsp of black pepper powder
  • 1/2 tsp of garam masala powder
  • 1 tbsp of soy sauce
  • 1 tbsp of vinegar
  • Chopped coriander leaves for garnish
Instructions:
  1. Heat oil in a large pan over medium-high heat. Once hot, add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions, garlic, ginger paste, and green chillies (if using). Sauté for a minute until the onions are translucent.
  3. Add chopped carrots and capsicum and sauté for a few minutes until they are slightly tender.
  4. Add cubed paneer to the pan and sauté for another 2-3 minutes until the paneer is slightly browned on all sides.
  5. Add cooked rice to the pan and mix well with the vegetables and paneer. Add salt, black pepper powder, and garam masala powder and stir to combine.
  6. Add soy sauce and vinegar to the pan and mix well until everything is well coated.
  7. Cook the paneer fried rice for another 5-7 minutes, stirring occasionally, until everything is heated through and the flavors have melded together.
  8. Garnish with chopped coriander leaves and serve hot.
