Ingredients:
- 2 cups of cooked basmati rice (preferably cooked and cooled the day before)
- 1 cup of paneer, cubed
- 1 onion, chopped
- 1 capsicum (bell pepper), chopped
- 1 carrot, chopped
- 2-3 cloves of garlic, minced
- 1 tsp of ginger paste
- 1-2 green chillies, chopped (optional)
- 2-3 tbsp of vegetable oil
- 1 tsp of cumin seeds
- Salt to taste
- 1/2 tsp of black pepper powder
- 1/2 tsp of garam masala powder
- 1 tbsp of soy sauce
- 1 tbsp of vinegar
- Chopped coriander leaves for garnish
Instructions:
- Heat oil in a large pan over medium-high heat. Once hot, add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions, garlic, ginger paste, and green chillies (if using). Sauté for a minute until the onions are translucent.
- Add chopped carrots and capsicum and sauté for a few minutes until they are slightly tender.
- Add cubed paneer to the pan and sauté for another 2-3 minutes until the paneer is slightly browned on all sides.
- Add cooked rice to the pan and mix well with the vegetables and paneer. Add salt, black pepper powder, and garam masala powder and stir to combine.
- Add soy sauce and vinegar to the pan and mix well until everything is well coated.
- Cook the paneer fried rice for another 5-7 minutes, stirring occasionally, until everything is heated through and the flavors have melded together.
- Garnish with chopped coriander leaves and serve hot.
