Ingredients:
  • 500 grams chicken, cut into pieces
  • 2 onions, finely chopped
  • 4-5 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons white vinegar
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1/2 teaspoon cinnamon powder
  • 1/2 teaspoon cloves powder
  • 1/2 teaspoon sugar
  • Salt to taste
  • Fresh coriander leaves for garnishing
Instructions:
  1. In a mixing bowl, combine the minced garlic, grated ginger, vinegar, turmeric powder, red chili powder, coriander powder, cinnamon powder, cloves powder, sugar, and salt. Mix well to make the marinade.
  2. Add the chicken pieces to the marinade and coat them thoroughly. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight for the flavors to develop.
  3. Heat oil in a deep pan or kadai over medium heat. Add the mustard seeds and cumin seeds. Let them splutter.
  4. Add the chopped onions to the pan and sauté until they turn golden brown.
  5. Add the marinated chicken to the pan, along with any remaining marinade. Cook for about 10 minutes, stirring occasionally, until the chicken is slightly browned.
  6. Reduce the heat to low and cover the pan. Allow the chicken to cook for another 20-25 minutes or until it is tender and cooked through. Stir occasionally and add water if needed to maintain the desired consistency.
  7. Once the chicken is cooked, remove from heat and garnish with fresh coriander leaves.
  8. Goan Chicken Vindaloo is now ready to be served.

Goan Chicken Vindaloo pairs well with steamed rice, naan bread, or roti. The tangy and spicy flavors of this dish make it a favorite among spice lovers. Adjust the amount of red chili powder according to your spice preference. Enjoy the rich and vibrant flavors of this authentic Goan curry!
