Basic Sponge Cake is made with only a few ingredients that you probably have in your pantry. This sponge cake is commonly used to make layered cakes but can be used as-is as well. Perfectly soft, spongy, and delicious!

Ingredients:
  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 large eggs, at room temperature
  • 1 and 1/4 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup milk, at room temperature
Instructions:
  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the eggs and granulated sugar together using an electric mixer on high speed for about 5 minutes, or until pale and fluffy.
  4. Add the vanilla extract to the egg mixture and mix until combined.
  5. Gradually pour in the melted butter while mixing on low speed. Mix until well incorporated.
  6. Add half of the dry ingredients to the batter and mix on low speed until just combined.
  7. Pour in the milk and mix until incorporated. Then, add the remaining dry ingredients and mix until the batter is smooth and no lumps remain.
  8. Pour the batter into the prepared cake pan and spread it evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
