Instructions:
  1. Heat the ghee in a pan and add the cashews and raisins. Fry until they turn golden brown.
  2. Remove the cashews and raisins from the pan and set them aside.
  3. In the same pan, add the vermicelli and roast it on medium-low heat until it turns light brown. Be careful not to burn it.
  4. Add the milk to the pan and bring it to a boil. Reduce the heat to low and let it simmer for 10-15 minutes, or until the vermicelli is cooked and the milk thickens.
  5. Add the sugar to the pan and stir until it dissolves.
  6. Add the fried cashews, raisins, cardamom powder, and saffron (if using) to the pan. Mix well.
  7. Let the payasam simmer for another 2-3 minutes.
