Ingredients:
- 1/2 cup Basmati rice
- 4 cups milk
- 1/2 cup sugar
- 1/4 cup ghee (clarified butter)
- 10-12 cashews
- 10-12 raisins

- A pinch of saffron (optional)
Instructions:
- Wash the rice and soak it in water for 30 minutes.
- Drain the water from the rice and set it aside.
- Heat the ghee in a heavy-bottomed pan and add the cashews and raisins. Fry until they turn golden brown.
- Remove the cashews and raisins from the pan and set them aside.
- In the same pan, add the drained rice and sauté for a few minutes.
- Add 4 cups of milk to the pan and bring it to a boil.
- Reduce the heat to low and let the rice simmer for about 20-25 minutes, or until it is cooked and the milk has thickened.
- Add the sugar to the pan and stir until it dissolves.
- Add the fried cashews, raisins, cardamom powder, and saffron (if using) to the pan. Mix well.
- Let the payasam simmer for another 2-3 minutes.
- Remove the pan from heat and let the payasam cool for a few minutes.
- Serve warm or chilled, garnished with additional cashews and raisins.
