Ingredients:
  • 250 grams shrimp, cleaned and deveined
  • 1/2 cup chickpea flour (besan)
  • 2 tablespoons rice flour
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying
  • Fresh coriander leaves for garnishing (optional)
  • Lemon wedges for serving
Instructions:
  1. In a mixing bowl, combine chickpea flour, rice flour, ginger-garlic paste, red chili powder, turmeric powder, cumin powder, garam masala, and salt. Mix well.
  2. Add a little water at a time to the dry ingredients and make a thick batter. The consistency should be thick enough to coat the shrimp.
  3. Add the cleaned and deveined shrimp to the batter and mix well, ensuring that each shrimp is coated evenly with the batter.
  4. Heat oil in a deep pan or kadai for frying.
  5. Once the oil is hot, carefully drop the coated shrimp into the oil one by one. Fry them in batches to avoid overcrowding.
  6. Fry the shrimp on medium heat until they turn golden brown and crispy. This usually takes about 4-5 minutes per batch.
  7. Using a slotted spoon, remove the fried shrimp from the oil and place them on a plate lined with paper towels to absorb any excess oil.
  8. Repeat the frying process with the remaining shrimp batches.
