Ingredients:
- 500 grams boneless chicken (cut into small pieces)
- 1/2 cup yogurt
- 2 tablespoons cashew nut paste
- 2 tablespoons fresh cream
- 1 tablespoon ginger-garlic paste
- 1 tablespoon lemon juice
- 1 tablespoon melted butter
- 1 tablespoon finely chopped coriander leaves
- 1 tablespoon finely chopped mint leaves
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- Wooden skewers (pre-soaked in water)
Instructions:
- In a bowl, combine yogurt, cashew nut paste, fresh cream, ginger-garlic paste, lemon juice, melted butter, coriander leaves, mint leaves, garam masala, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well to form a smooth marinade.
- Add the chicken pieces to the marinade and coat them evenly. Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours, or preferably overnight, for the flavors to develop.
- Preheat your grill or oven to medium-high heat.
- If using a grill, grease the grates with some oil to prevent sticking. Thread the marinated chicken pieces onto the pre-soaked wooden skewers.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a slightly charred and smoky flavor.
- If using an oven, preheat it to 200°C (400°F). Line a baking sheet with aluminum foil and place the skewers on the sheet. Bake for 15-20 minutes, or until the chicken is cooked through and has a slight char.
- Once cooked, remove the Reshmi Kebabs from the grill or oven and let them rest for a few minutes.
