Rava Idli is a popular South Indian dish that is a variation of traditional idli. It is made with semolina (also known as rava or sooji) instead of fermented rice and lentil batter. Rava Idli is quick and easy to prepare since it doesn’t require fermentation. Here’s a recipe for Easy and No Fermentation Rava Idli:

Ingredients:
  • 1 cup semolina (rava/sooji)
  • 1 cup plain yogurt (curd)
  • 1/2 cup water (adjust as needed)
  • 1/4 cup grated carrot
  • 1/4 cup finely chopped cilantro (coriander leaves)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 1 teaspoon chana dal (split Bengal gram)
  • 1/2 teaspoon finely chopped ginger
  • 1/2 teaspoon finely chopped green chili
  • 1/2 teaspoon baking soda
  • Salt to taste
Instructions:
  1. In a mixing bowl, combine the semolina (rava), yogurt, and water. Mix well to form a thick batter. Let it rest for 10 minutes to allow the semolina to absorb the moisture.
  2. Meanwhile, heat oil in a small pan over medium heat. Add the mustard seeds and let them splutter. Then add the urad dal, chana dal, chopped ginger, and green chili. Sauté until the dals turn golden brown.
  3. Add this tempering mixture to the semolina batter. Mix well.
  4. Add grated carrot, chopped cilantro, and salt to the batter. Stir until all the ingredients are well incorporated.
  5. Boil water in a steamer or idli cooker. Grease the idli plates or molds with oil.
  6. Just before steaming, add baking soda to the batter and give it a quick stir.
  7. Pour the batter into the greased idli plates, filling each mold about 3/4 full.
  8. Place the idli plates in the steamer or idli cooker and steam for about 15-20 minutes or until a toothpick inserted into the idli comes out clean.
  9. Once cooked, remove the idli plates from the steamer and allow them to cool for a minute.
  10. Gently remove the idlis from the molds using a spoon or butter knife.
  11. Serve the Rava Idlis hot with coconut chutney, sambar, or any other accompaniment of your choice.
