Ingredients:
  • 1 cup quinoa
  • 2 cups water

  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped carrots
  • 1/4 cup green peas
  • 1/4 cup chopped bell peppers (capsicum)
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon grated ginger
  • A few curry leaves
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving (optional)
Instructions:
  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Remove from heat and keep it covered for 5 minutes.
  3. In a separate pan, heat oil or ghee over medium heat. Add mustard seeds and cumin seeds and let them splutter.
  4. Add chopped onions, carrots, green peas, bell peppers, green chili (if using), grated ginger, and curry leaves. Sauté for a few minutes until the vegetables are slightly tender.
  5. Add turmeric powder and salt. Mix well.
  6. Fluff the cooked quinoa with a fork and add it to the pan with the vegetables. Mix everything together gently to combine.
  7. Cook for another 2-3 minutes until all the flavors meld together.
  8. Garnish with fresh coriander leaves and serve hot with lemon wedges on the side (optional).
