Quesadilla is a delicious Mexican dish made with tortillas and a filling of cheese, vegetables, and sometimes meat. It is a popular and versatile dish that can be enjoyed as an appetizer, snack, or even a main course. Here’s a recipe for Quesadilla:

Preparation time: 10 minutes
Cooking time: 10 minutes
Ready in: 20 minutes

Ingredients:
  • 4 large flour tortillas
  • 2 cups shredded cheese (such as Cheddar, Monterey Jack, or a blend)
  • 1 cup cooked and seasoned meat (such as grilled chicken, beef, or shrimp), optional
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin powder
  • Salt and pepper to taste
  • Cooking oil or butter for frying
Instructions:
  1. In a mixing bowl, combine the shredded cheese, cooked and seasoned meat (if using), diced bell peppers, diced onions, chopped cilantro, chili powder, cumin powder, salt, and pepper. Mix well to combine.
  2. Heat a large skillet or griddle over medium heat and lightly grease it with cooking oil or butter.
  3. Place one flour tortilla on the skillet and spread an even layer of the cheese and filling mixture on top, leaving a small border around the edges.
  4. Place another tortilla on top to cover the filling, pressing gently.
  5. Cook the quesadilla for about 2-3 minutes on each side, or until the tortillas turn golden brown and crispy, and the cheese melts.
  6. Once cooked, remove the quesadilla from the skillet and let it cool for a few moments.
  7. Cut the quesadilla into wedges or triangles using a sharp knife or pizza cutter.
  8. Repeat the process with the remaining tortillas and filling mixture.

Quesadillas can be served as is or with your favorite toppings such as salsa, guacamole, sour cream, or chopped fresh tomatoes. Enjoy them warm as a snack or meal.
