Ingredients:
  • 2 cups thick poha (flattened rice)
  • 1 medium-sized potato, boiled and mashed
  • 1/2 cup finely chopped mixed vegetables (carrots, peas, bell peppers, etc.)
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust as per your spice preference)
  • 1/2 teaspoon garam masala
  • 1 tablespoon chopped coriander leaves
  • Salt to taste
  • Oil for deep frying
Instructions:
  1. Start by washing the poha under running water. Drain the water completely and let the poha sit for about 5 minutes to soften. Gently fluff it up with a fork.
  2. In a mixing bowl, add the softened poha, mashed potato, chopped mixed vegetables, onion, green chilies, ginger-garlic paste, turmeric powder, red chili powder, garam masala, chopped coriander leaves, and salt. Mix everything well to combine.
  3. Shape the mixture into small round or nugget-shaped patties.
  4. Heat oil in a deep pan or kadai for frying.
  5. Once the oil is hot, carefully slide in the poha nuggets in batches. Fry them on medium heat until they turn golden brown and crispy. Ensure to flip them occasionally for even cooking.
  6. Once cooked, remove the nuggets from the oil and drain them on a paper towel to remove excess oil.
  7. Serve the Poha Nuggets hot with ketchup, chutney, or any sauce of your choice.
