Plain kulfi is a popular Indian frozen dessert that is creamy, rich, and flavored with cardamom. It is similar to ice cream but has a denser and creamier texture. Here is a recipe for plain kulfi:

Prep Time: 10 minutes

Chilling Time: 6-8 hours

Ingredients:
  • 4 cups full-fat milk
  • 1/2 cup condensed milk
  • 1/4 cup sugar
  • 1/4 cup powdered milk
  • 1/2 teaspoon cardamom powder
  • A few saffron strands (optional)
  • Slivered almonds or pistachios for garnish (optional)
Instructions:
  1. In a heavy-bottomed saucepan, pour the full-fat milk and bring it to a boil over medium heat. Stir occasionally to prevent scorching.
  2. Once the milk comes to a boil, reduce the heat to low and let it simmer. Stir occasionally to prevent a skin from forming on top.
  3. Simmer the milk for about 30 minutes or until it reduces to approximately half its original quantity. Stir occasionally to prevent sticking and burning.
  4. Add the condensed milk, sugar, and powdered milk to the reduced milk. Mix well until all the ingredients are well combined.
  5. Continue to simmer the mixture for another 10 minutes, stirring continuously to prevent it from sticking to the bottom of the pan.
  6. Add the cardamom powder and saffron strands (if using). Stir well to incorporate the flavors.
  7. Remove the pan from heat and let the mixture cool to room temperature.
  8. Pour the cooled mixture into kulfi molds or small individual serving bowls. If using molds, cover them with aluminum foil or plastic wrap to prevent ice crystals from forming.
  9. Place the molds or bowls in the freezer and let the kulfi set for at least 6-8 hours, or until firm.
  10. Once the kulfi is set and ready to serve, remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly.
  11. If using molds, unmold the kulfi by dipping the molds in warm water for a few seconds and then gently sliding the kulfi out onto a serving plate.
  12. Garnish the plain kulfi with slivered almonds or pistachios if desired.
  13. Serve the plain kulfi immediately and enjoy its creamy and refreshing taste.
