Nandu Gravy, also known as Crab Gravy, is a delicious and flavorful South Indian dish made with fresh crab cooked in a spicy and tangy gravy. Here is the recipe:

Serves: 4-6

Ingredients:
  • 2 medium-sized crabs, cleaned and cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, pureed or finely chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • 1 tablespoon ghee (clarified butter)
  • Fresh coriander leaves, chopped, for garnish
Instructions:
  1. Heat oil in a deep pan or kadai over medium heat. Add the chopped onions and sauté until they turn golden brown.
  2. Add the ginger-garlic paste and slit green chilies to the pan. Sauté for a minute until the raw smell of ginger-garlic paste disappears.
  3. Add the tomato puree or finely chopped tomatoes to the pan and cook until they become soft and mushy.
  4. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for a couple of minutes to roast the spices.
  5. Add the crab pieces to the pan and coat them well with the spice mixture.
  6. Reduce the heat to low, cover the pan, and let the crab cook in its juices for about 10-15 minutes. Stir occasionally to prevent sticking.
  7. After 15 minutes, remove the lid and add garam masala to the pan. Mix well and cook for another 5 minutes to allow the flavors to blend.
  8. In a separate small pan, heat ghee. Once the ghee is melted, add it to the crab gravy and mix well. This will enhance the flavor of the dish.
  9. Check the seasoning and adjust salt and spices according to your taste.
  10. Garnish with fresh chopped coriander leaves.
  11. Serve the Nandu Gravy hot with steamed rice, roti, or dosa.
