Nandu Gravy, also known as Crab Gravy, is a delicious and flavorful South Indian dish made with fresh crab cooked in a spicy and tangy gravy. Here is the recipe:

Ingredients:
- 2 medium-sized crabs, cleaned and cut into pieces
- 2 onions, finely chopped
- 2 tomatoes, pureed or finely chopped
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- 1 tablespoon ghee (clarified butter)
- Fresh coriander leaves, chopped, for garnish
Instructions:
- Heat oil in a deep pan or kadai over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and slit green chilies to the pan. Sauté for a minute until the raw smell of ginger-garlic paste disappears.
- Add the tomato puree or finely chopped tomatoes to the pan and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for a couple of minutes to roast the spices.
- Add the crab pieces to the pan and coat them well with the spice mixture.
- Reduce the heat to low, cover the pan, and let the crab cook in its juices for about 10-15 minutes. Stir occasionally to prevent sticking.
- After 15 minutes, remove the lid and add garam masala to the pan. Mix well and cook for another 5 minutes to allow the flavors to blend.
- In a separate small pan, heat ghee. Once the ghee is melted, add it to the crab gravy and mix well. This will enhance the flavor of the dish.
- Check the seasoning and adjust salt and spices according to your taste.
- Garnish with fresh chopped coriander leaves.
- Serve the Nandu Gravy hot with steamed rice, roti, or dosa.
