  • 500 grams chicken, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 sprig curry leaves
  • 1/2 cup coconut milk
  • 2 tablespoons coconut oil (or any cooking oil)
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder (adjust to taste)
  • 1 tablespoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Water, as needed
Instructions:
  1. Heat oil in a deep pan or kadai over medium heat. Add the mustard seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and slit green chilies. Sauté for a minute until fragrant.
  4. Add the tomatoes and curry leaves. Cook until the tomatoes become soft and mushy.
  5. Add the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well to combine the spices with the onions and tomatoes.
  6. Add the chicken pieces to the pan and coat them with the spice mixture. Cook for a few minutes until the chicken is sealed and slightly browned.
  7. Reduce the heat to low and cover the pan. Allow the chicken to cook for about 20-25 minutes or until it is tender and cooked through. Stir occasionally and add water if needed to maintain the desired consistency.
  8. Once the chicken is cooked, add the coconut milk to the pan. Mix well and simmer for another 5 minutes to let the flavors blend together.
  9. Remove from heat and garnish with fresh coriander leaves.
  10. Nadan Kozhi is now ready to be served.
