Mutton Rara is a delicious and hearty North Indian dish made with tender mutton (goat meat) cooked in a rich and flavorful gravy. It gets its name from the use of minced meat (keema) along with the mutton pieces, giving it a unique texture. Here’s the recipe:
Preparation time: 20 minutes
Cooking time: 1 hour 30 minutes
Ready in: 1 hour 50 minutes
Ingredients:
- 500 grams mutton, cut into pieces
- 200 grams minced meat (mutton or beef)
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon dried fenugreek leaves (kasuri methi)
- 4 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Heat oil or ghee in a pressure cooker or a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and cook for a minute until fragrant.
- Add the mutton pieces to the pan and cook until they are browned on all sides.
- Reduce the heat to low and add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.
- Add the minced meat (keema) to the pan and cook until it is browned and cooked through.
- Add the chopped tomatoes and cook until they become soft and mushy.
- If using a pressure cooker, add about 1/2 cup of water and pressure cook for about 5-6 whistles or until the mutton is tender. If using a regular pan, add about 1-2 cups of water, cover, and cook on low heat for about 1 hour or until the mutton is tender, stirring occasionally and adding more water if needed.
- Once the mutton is cooked and the desired consistency is achieved, sprinkle garam masala and dried fenugreek leaves (kasuri methi) over the dish. Mix well and cook for an additional 5 minutes to allow the flavors to meld together.
- Garnish the Mutton Rara with fresh coriander leaves.
Mutton Rara is best served hot with naan, roti, or rice. The combination of tender mutton pieces and minced meat in a rich gravy makes it a lip-smacking dish. Enjoy this flavorful and indulgent curry as a special treat for your loved ones.
