Ingredients:
  • 500 grams mutton, cut into pieces
  • 3 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 2 teaspoons ginger paste
  • 2 teaspoons garlic paste
  • 2 green chilies, slit lengthwise
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1 cup plain yogurt, whisked
  • 2 tomatoes, finely chopped
  • Salt to taste
  • Fresh coriander leaves, for garnish
Instructions:
  1. Heat the vegetable oil in a large, heavy-bottomed pan over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger paste, garlic paste, and green chilies to the pan. Cook for about a minute until fragrant.
  4. In a small bowl, mix together the ground cumin, ground coriander, turmeric powder, red chili powder, and garam masala.
  5. Add the spice mixture to the pan and cook for a couple of minutes, stirring continuously.
  6. Add the mutton pieces to the pan and cook until they are evenly browned.
  7. Reduce the heat to low and add the whisked yogurt to the pan. Stir well to combine.
  8. Add the chopped tomatoes to the pan and season with salt. Stir to combine all the ingredients.
  9. Cover the pan with a lid and let the mutton simmer over low heat for about 1 hour, or until the meat is tender and the flavors are well developed. Stir occasionally and add water if needed.
  10. Once the mutton is cooked and the gravy has thickened, remove the pan from heat.
  11. Garnish the Mutton Curry with fresh coriander leaves.
