Ingredients:
- 500 grams mutton, cut into pieces
- 3 tablespoons vegetable oil
- 2 medium onions, finely chopped
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- 2 green chilies, slit lengthwise
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 1 cup plain yogurt, whisked
- 2 tomatoes, finely chopped
- Salt to taste
- Fresh coriander leaves, for garnish
Instructions:
- Heat the vegetable oil in a large, heavy-bottomed pan over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger paste, garlic paste, and green chilies to the pan. Cook for about a minute until fragrant.
- In a small bowl, mix together the ground cumin, ground coriander, turmeric powder, red chili powder, and garam masala.
- Add the spice mixture to the pan and cook for a couple of minutes, stirring continuously.
- Add the mutton pieces to the pan and cook until they are evenly browned.
- Reduce the heat to low and add the whisked yogurt to the pan. Stir well to combine.
- Add the chopped tomatoes to the pan and season with salt. Stir to combine all the ingredients.
- Cover the pan with a lid and let the mutton simmer over low heat for about 1 hour, or until the meat is tender and the flavors are well developed. Stir occasionally and add water if needed.
