Ingredients:
  • 500 grams mutton, cut into pieces
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 4 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnishing
Whole Spices:
  • 1 cinnamon stick
  • 4 cloves
  • 4 green cardamom pods
  • 2 black cardamom pods
  • 2 bay leaves
Instructions:
  1. Heat oil or ghee in a pressure cooker or a heavy-bottomed pan over medium heat. Add the whole spices (cinnamon stick, cloves, green cardamom pods, black cardamom pods, and bay leaves) and sauté for a minute until fragrant.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and cook for a minute until fragrant.
  4. Add the mutton pieces to the pan and cook until they are browned on all sides.
  5. Reduce the heat to low and add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.
  6. Add the chopped tomatoes and cook until they become soft and mushy.
  7. If using a pressure cooker, add about 1/2 cup of water and pressure cook for about 5-6 whistles or until the mutton is tender. If using a regular pan, add about 1-2 cups of water, cover, and cook on low heat for about 1 hour or until the mutton is tender, stirring occasionally and adding more water if needed.
  8. Once the mutton is cooked and the desired consistency is achieved, sprinkle garam masala over the dish and mix well. Cook for an additional 5 minutes to allow the flavors to meld together.
  9. Garnish the Muslim Mutton Curry with fresh coriander leaves.
