Ingredients:
  • 250 grams mushrooms, sliced
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1/2 cup coconut milk
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 2-3 cloves
  • 1-inch cinnamon stick
  • 2-3 green cardamom pods
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro leaves, for garnish
Instructions:
  1. Heat oil in a pan or kadai over medium heat. Add the mustard seeds and cumin seeds. Allow them to splutter.
  2. Add the bay leaf, cloves, cinnamon stick, and cardamom pods to the pan. Sauté for a few seconds until they release their aroma.
  3. Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
  4. Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell disappears.
  5. Add the tomato puree to the pan and cook for a few minutes until the oil separates.
  6. Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute to roast the spices.
  7. Add the sliced mushrooms to the pan and stir to coat them with the spice mixture. Cook for 3-4 minutes until the mushrooms release their moisture.
  8. Pour the coconut milk into the pan and mix well. Bring the mixture to a simmer and cook for 8-10 minutes, allowing the flavors to meld together and the mushrooms to become tender.
  9. Sprinkle the garam masala over the mushroom curry and mix well. Cook for another couple of minutes.
  10. Remove the pan from heat and garnish the mushroom kurma with fresh cilantro leaves.
  11. Serve the Mushroom Kurma hot with rice, roti, or naan.
