Ingredients:
  • 1 cup moong dal (split green gram)
  • 1/4 cup rice
  • 1/4 cup urad dal (split black gram)
  • 1 tablespoon fenugreek seeds (optional)
  • Salt to taste
  • Oil or ghee for cooking
Instructions:
  1. Wash the moong dal, rice, and urad dal together and soak them in water for about 4-6 hours. If desired, you can also add fenugreek seeds to the soaking mixture.
  2. After the soaking time, drain the water and transfer the soaked ingredients to a blender. Grind them to a smooth batter by adding some water gradually.
  3. Once the batter is smooth, transfer it to a bowl and add salt. Mix well and allow the batter to ferment overnight or for about 6-8 hours. The fermentation process gives the dosas a slight tangy flavor.
  4. After fermentation, the batter will be light and bubbly. Give it a good stir before making dosas.
  5. Heat a non-stick or cast-iron skillet over medium heat and lightly grease it with oil or ghee.
  6. Pour a ladleful of the fermented batter onto the center of the skillet and spread it in a circular motion to form a thin dosa.
  7. Drizzle a little oil or ghee around the edges of the dosa and cook until the bottom turns golden brown and crisp.
  8. Flip the dosa and cook the other side for a minute or until it is cooked through.
  9. Remove the dosa from the skillet and repeat the process with the remaining batter.
  10. Serve the moong dal dosa hot with chutney or sambar.
