Ingredients:
- 1 cup gram flour (besan)

- 1/2 teaspoon turmeric powder
- 1/2 teaspoon baking soda
- Salt to taste
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon sesame seeds
- A few curry leaves
- Chopped coriander leaves for garnishing
For tempering (optional):
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 2-3 green chilies, slit
Instructions:
- In a large mixing bowl, combine gram flour, semolina, yogurt, lemon juice, ginger paste, chopped green chili, turmeric powder, and salt. Mix well.
- Gradually add water to the mixture and whisk to form a smooth batter. The batter should be of pouring consistency, similar to pancake batter.
- Cover the batter and let it ferment for 3-4 hours. During fermentation, the batter will rise and become light and airy.
- After fermentation, add baking soda to the batter and mix well. The batter will become frothy.
- Grease a round or square baking dish with oil. Pour the batter into the greased dish and spread it evenly.
- Steam the batter in a steamer or idli cooker for about 15-20 minutes or until a toothpick inserted into the dhokla comes out clean.
- Once the dhokla is cooked, remove it from the steamer and let it cool for a few minutes.
- Cut the dhokla into square or diamond-shaped pieces.
- For tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Then add sesame seeds and curry leaves. Pour this tempering over the dhokla pieces.
- Garnish the dhokla with chopped coriander leaves.
- Serve the Khaman Dhokla warm with green chutney or tamarind chutney.
