Kara Chutney is a popular South Indian spicy and tangy chutney that pairs well with dosa, idli, or any other breakfast item. It’s made with a combination of fiery red chilies, onions, tomatoes, and tamarind, giving it a robust and flavorful taste. Here’s the recipe:

Ingredients:
  • 10-12 dried red chilies (adjust according to your spice preference)
  • 1 small onion, roughly chopped
  • 2 medium-sized tomatoes, roughly chopped
  • 3-4 garlic cloves
  • 1 small piece of tamarind (about 1 teaspoon tamarind paste)
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (split black gram)
  • A pinch of asafoetida (hing)
  • Salt to taste
Instructions:
  1. In a pan, heat 1 tablespoon of oil over medium heat. Add the dried red chilies, chopped onions, and garlic cloves. Sauté them until the onions turn translucent and the chilies become slightly roasted. Remove from heat and let it cool.
  2. In the same pan, add the chopped tomatoes and cook until they become soft and mushy. Turn off the heat and let them cool as well.
  3. Once the roasted chilies, onions, garlic, and tomatoes have cooled down, transfer them to a blender or mixer jar. Add the tamarind piece or tamarind paste and salt.
  4. Blend all the ingredients into a smooth paste. You can add a little water if needed to achieve the desired consistency.
  5. In a separate pan, heat a little oil and add mustard seeds. When they start spluttering, add urad dal and asafoetida. Sauté until the dal turns golden brown.
  6. Pour the tempered mixture over the chutney and mix well.
  7. Taste the chutney and adjust the seasoning or spice level according to your preference.
  8. The Kara Chutney is now ready to serve.
