  • 1 cup sugar

Instructions:
  1. Remove the seeds from the ripe jackfruit and discard them. Cut the jackfruit flesh into small pieces and blend them in a blender or food processor to obtain a smooth pulp. Set aside.
  2. Heat ghee in a thick-bottomed pan or kadhai on medium heat.
  3. Add the jackfruit pulp to the pan and cook it on medium-low heat, stirring continuously to prevent it from sticking to the bottom of the pan.
  4. Cook the jackfruit pulp for about 15-20 minutes until it thickens and the raw smell disappears.
  5. Add sugar to the pan and mix well with the jackfruit pulp. Continue cooking on medium-low heat.
  6. Stir the mixture occasionally to prevent it from sticking or burning. The sugar will melt and the mixture will become more liquidy.
  7. Cook the halwa for another 25-30 minutes until it thickens and starts leaving the sides of the pan. The halwa will also become glossy and start to come together.
  8. Add cardamom powder and saffron strands to the halwa and mix well to incorporate the flavors.
  9. Remove the pan from heat and transfer the jackfruit halwa to a greased plate or serving dish.
  10. Garnish the halwa with chopped nuts of your choice, such as almonds, cashews, or pistachios.
  11. Allow the halwa to cool for some time. Once cooled, cut it into desired shapes or serve it as a whole.
