Ingredients:
- 500 grams mutton, cut into pieces
- 2 cups gongura leaves (sorrel leaves), cleaned and finely chopped
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 tablespoons ginger-garlic paste
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Heat oil in a pressure cooker or a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and cook for a minute until fragrant.
- Add the mutton pieces to the pan and cook until they are browned on all sides.
- Reduce the heat to low and add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the finely chopped gongura leaves to the pan and mix well. Cover and cook for about 5 minutes until the gongura leaves wilt.
- If using a pressure cooker, add about 1/2 cup of water and pressure cook for about 5-6 whistles or until the mutton is tender. If using a regular pan, add about 1-2 cups of water, cover, and cook on low heat for about 1 hour or until the mutton is tender, stirring occasionally and adding more water if needed.
- Once the mutton is cooked and the desired consistency is achieved, sprinkle garam masala over the dish and mix well. Cook for an additional 5 minutes to allow the flavors to meld together.
- Garnish the Gongura Mutton with fresh coriander leaves.
