Ingredients: 
For the cauliflower:
  • 1 medium-sized cauliflower, cut into florets

  • 1/4 cup cornflour
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon red chili powder
  • Salt to taste
  • Water, as needed
  • Oil for deep frying
For the sauce:
  • 2 tablespoons oil
  • 1 tablespoon ginger-garlic paste
  • 1 small onion, finely chopped
  • 1 small capsicum (bell pepper), thinly sliced
  • 2 green chilies, slit
  • 2 tablespoons tomato ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 tablespoon chili sauce (optional)
  • 1/2 teaspoon sugar
  • Salt to taste
  • 1/4 cup water
  • 1 tablespoon cornflour mixed with 2 tablespoons water
  • Fresh coriander leaves for garnishing
Instructions:
  1. In a mixing bowl, combine all-purpose flour, cornflour, ginger-garlic paste, red chili powder, and salt. Gradually add water and mix well to make a smooth batter of pouring consistency.
  2. Dip the cauliflower florets into the batter, making sure they are well coated.
  3. Heat oil in a deep pan or kadai over medium heat. Deep-fry the cauliflower florets in batches until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel.
  4. In a separate pan, heat oil and add ginger-garlic paste. Sauté for a minute until fragrant.
  5. Add the chopped onions, capsicum, and slit green chilies. Stir-fry on high heat for a few minutes until the vegetables are slightly cooked yet crisp.
  6. Add tomato ketchup, soy sauce, vinegar, chili sauce (if using), sugar, and salt. Mix well to combine the sauces and spices.
  7. In a small bowl, mix cornflour with water to make a slurry. Add the slurry to the pan and stir well.
  8. Add water and bring the sauce to a boil. Cook for a few minutes until the sauce thickens and becomes glossy.
  9. Add the fried cauliflower florets to the sauce and toss gently to coat them evenly with the sauce.
  10. Cook for another 2-3 minutes, allowing the flavors to blend.
  11. Garnish with fresh coriander leaves.
  12. Gobi Manchurian is now ready to be served.
