Ingredients:
- 1 cup foxtail millet

- 1 green chili, finely chopped
- 1 carrot, diced
- 1 capsicum, diced
- 1/2 cup green peas
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Rinse the foxtail millet thoroughly under running water and soak it in water for 15 minutes. Drain the water and set aside.
- In a deep pan or pressure cooker, heat ghee or oil over medium heat.
- Add cumin seeds and let them splutter.
- Add the chopped onions and green chili. Sauté until the onions turn translucent.
- Add the diced carrots, capsicum, and green peas. Stir-fry for a couple of minutes until the vegetables are slightly tender.
- Add the soaked foxtail millet to the pan and mix well with the vegetables.
- Add water, turmeric powder, garam masala powder, and salt. Stir everything together.
- If using a pressure cooker, cover it with a lid and cook for 3-4 whistles on medium heat. If using a pan, cover it with a lid and cook until the millet is cooked and the water is absorbed (about 20-25 minutes).
- Once the pulao is cooked, fluff it with a fork and let it rest for a few minutes.
- Garnish with fresh coriander leaves and serve hot.
