Ingredients:
  • 1 cup foxtail millet
  • 2 cups water

  • 1 green chili, finely chopped
  • 1 carrot, diced
  • 1 capsicum, diced
  • 1/2 cup green peas
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • Fresh coriander leaves for garnish
Instructions:
  1. Rinse the foxtail millet thoroughly under running water and soak it in water for 15 minutes. Drain the water and set aside.
  2. In a deep pan or pressure cooker, heat ghee or oil over medium heat.
  3. Add cumin seeds and let them splutter.
  4. Add the chopped onions and green chili. Sauté until the onions turn translucent.
  5. Add the diced carrots, capsicum, and green peas. Stir-fry for a couple of minutes until the vegetables are slightly tender.
  6. Add the soaked foxtail millet to the pan and mix well with the vegetables.
  7. Add water, turmeric powder, garam masala powder, and salt. Stir everything together.
  8. If using a pressure cooker, cover it with a lid and cook for 3-4 whistles on medium heat. If using a pan, cover it with a lid and cook until the millet is cooked and the water is absorbed (about 20-25 minutes).
  9. Once the pulao is cooked, fluff it with a fork and let it rest for a few minutes.
  10. Garnish with fresh coriander leaves and serve hot.
