Ingredients:
- 2 cups basmati rice
- 4 boiled eggs
- 2 onions, sliced
- 1 tbsp ginger-garlic paste
- 2 green chilies, slit
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp garam masala powder
- 1/4 cup chopped cilantro leaves
- Salt to taste
- 3 tbsp oil
- 2 tbsp ghee
- 2 cups water
Instructions:
- Soak the basmati rice in water for 20-30 minutes.
- In a pot, heat oil and ghee over medium heat and add sliced onions. Fry until they turn golden brown and crispy.
- Add ginger-garlic paste and green chilies, sauté for a minute.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add red chili powder, coriander powder, turmeric powder, and garam masala powder. Mix well.
- Add plain yogurt and stir continuously until everything is well combined.
- Add chopped cilantro leaves and salt to taste.
- Add boiled eggs and coat them with the mixture. Remove from heat.
- In another pot, boil 2 cups of water and add soaked basmati rice.
- Cook until the rice is about 70-80% done and strain the excess water.
- In a large pot, add a layer of the egg masala mixture at the bottom, followed by a layer of rice. Repeat until all the rice and egg mixture have been used up.
- Cover the pot and cook on low heat for 10-15 minutes or until the rice is fully cooked.
