Mutta Aviyal, also known as Egg Aviyal, is a traditional South Indian dish made with boiled eggs and a flavorful blend of vegetables in a coconut-based gravy. It is a popular dish in Kerala cuisine and is typically enjoyed with rice or roti.

Ingredients:
  • 4 boiled eggs
  • 1 cup mixed vegetables (carrots, beans, drumsticks, potatoes, etc.), chopped
  • 1/2 cup grated coconut
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • A few curry leaves
  • 2 tablespoons oil
  • Salt to taste
Instructions:
  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add curry leaves and slit green chilies. Sauté for a minute.
  3. Add the chopped mixed vegetables and cook until they are tender.
  4. In the meantime, grind grated coconut and cumin seeds to a smooth paste using a blender or mixer.
  5. Once the vegetables are cooked, add the coconut paste to the pan.
  6. Add turmeric powder and salt. Mix well and cook for a couple of minutes.
  7. Make shallow slits on the boiled eggs and add them to the pan. Gently coat the eggs with the coconut gravy.
  8. Cover the pan and simmer for 5-10 minutes, allowing the flavors to blend together.
  9. Remove from heat and garnish with fresh cilantro leaves.
  10. Serve Mutta Aviyal hot with rice or roti.
