Dum Pukht’s Galouti Kebab is a popular and melt-in-your-mouth kebab dish from the Awadhi cuisine of Lucknow. It is made with minced meat, a blend of aromatic spices, and tenderizing agents, resulting in incredibly flavorful and tender kebabs. Here’s the recipe:

Ingredients:
  • 500 grams minced meat (mutton or beef)
  • 2 tablespoons raw papaya paste (as a tenderizer)
  • 2 tablespoons grated onion
  • 2 tablespoons finely chopped green papaya
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon roasted gram flour (besan)
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground mace
  • Salt to taste
  • Ghee or oil for frying
  • Chopped coriander leaves for garnishing
  • Slivered almonds or cashews for garnishing
Instructions:
  1. In a mixing bowl, combine the minced meat, raw papaya paste, grated onion, chopped green papaya, ginger-garlic paste, roasted gram flour, red chili powder, turmeric powder, garam masala, roasted cumin powder, dried fenugreek leaves, ground nutmeg, ground mace, and salt. Mix well to incorporate all the ingredients.
  2. Cover the bowl and refrigerate the mixture for at least 2 hours or overnight to allow the flavors to meld together.
  3. Divide the meat mixture into small lemon-sized balls. Flatten each ball gently between your palms to form a kebab patty.
  4. Heat ghee or oil in a pan or tawa over medium heat. Fry the kebabs on both sides until they turn golden brown and are cooked through. Alternatively, you can also grill or bake the kebabs.
  5. Once the kebabs are cooked, remove them from the heat and transfer them to a serving plate.
  6. Garnish the Galouti Kebabs with chopped coriander leaves and slivered almonds or cashews.
