Mutton leg soup is a nourishing and flavorful soup made with the leg portion of mutton (goat or lamb). It is often prepared as a healthy and comforting dish. Here is a recipe for mutton leg soup:

Prep Time: 20 minutes
Cook Time: 2 hours
Ready Time: 2 hours and 20 minutes

Ingredients:

  • 500 grams mutton leg pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 carrot, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 8-10 cups water
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)
Instructions:
  1. Heat vegetable oil in a large pot or pressure cooker over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add minced garlic and grated ginger to the pot. Sauté for a minute until the raw smell disappears.
  4. Add the mutton leg pieces to the pot and cook until they start to brown slightly.
  5. Add the chopped tomatoes, carrots, and celery to the pot. Cook for a few minutes until the vegetables soften.
  6. Add turmeric powder, black pepper powder, cumin powder, coriander powder, and salt to taste. Mix well to coat the mutton and vegetables evenly with the spices.
  7. Pour water into the pot, covering the mutton and vegetables completely.
  8. If using a pressure cooker, close the lid and cook for about 6-8 whistles or until the mutton is tender. If using a regular pot, cover and simmer for about 1.5 to 2 hours, or until the mutton is tender and the flavors have melded together. Stir occasionally and add more water if needed.
  9. Once the mutton is cooked and tender, remove the pot from heat.
  10. Using a slotted spoon, remove the mutton leg pieces from the soup and shred the meat using a fork. Discard any bones or excess fat.
  11. Return the shredded mutton back to the soup and mix well.
  12. Serve the mutton leg soup hot, garnished with freshly chopped coriander leaves.
  13. Squeeze a few drops of lemon juice into each bowl of soup before serving for added freshness.

Note: Cooking times may vary depending on the size and type of mutton leg pieces. Adjust the cooking time accordingly to ensure that the mutton is fully cooked and tender.

This recipe serves approximately 4-6 people. Feel free to adjust the quantity of ingredients based on your requirements. Enjoy the nourishing and flavorful mutton leg soup!
