Ingredients:
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 ripe banana, mashed
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup chopped walnuts
Instructions:
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Add the mashed banana, chocolate chips, and chopped walnuts to the batter and stir gently.
  5. Heat a non-stick skillet or griddle over medium heat.
  6. Use a 1/4 cup measuring cup to scoop the batter onto the skillet or griddle.
  7. Cook the pancakes for 2-3 minutes on each side or until golden brown.
  8. Serve warm with additional chocolate chips and walnuts on top, if desired.
