Ingredients:
For marination:
- 500 grams boneless chicken, cut into small pieces

- 1 teaspoon salt
- 2 tablespoons yogurt
For the gravy:
- 3 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2 bay leaves
- 1 cinnamon stick
- 4 cloves
- 4 cardamom pods
- 1 onion, finely chopped
- 2 teaspoons ginger garlic paste
- 2 green chilies, slit
- 1 tomato, chopped
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- 2 teaspoons garam masala powder
- Salt to taste
- 1/2 cup water
- Curry leaves
- Chopped coriander leaves
Instructions:
- In a bowl, mix together the chicken pieces, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, salt, and yogurt. Let it marinate for at least 30 minutes.
- Heat oil in a pan and add mustard seeds and cumin seeds. When they start to splutter, add bay leaves, cinnamon stick, cloves, and cardamom pods.
- Add the chopped onions and sauté until they turn translucent.
- Add ginger garlic paste and green chilies. Sauté for a minute.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
- Add the marinated chicken and mix well. Cook for 5 minutes.
- Add water and curry leaves. Mix well and bring it to a boil.
- Reduce the heat and let it simmer for 20-25 minutes or until the chicken is cooked and the gravy has thickened.
