- 500 grams mutton, cut into pieces

- 1 teaspoon cumin powder
- 1 teaspoon fennel seeds
- 1 teaspoon black peppercorns
- 1 teaspoon poppy seeds
- 2-3 dried red chilies
- 2 tablespoons grated coconut (optional)
- 1 sprig curry leaves
- 2 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Dry roast the fennel seeds, black peppercorns, poppy seeds, dried red chilies, and grated coconut (if using) in a pan until fragrant. Allow them to cool, and then grind them into a fine powder.
- Heat oil or ghee in a pressure cooker or a heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and cook for a minute until fragrant.
- Add the mutton pieces to the pan and cook until they are browned on all sides.
- Reduce the heat to low and add the turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the mutton with the spices.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the ground spice powder and mix well to combine with the mutton.
- If using a pressure cooker, add about 1/2 cup of water and pressure cook for about 5-6 whistles or until the mutton is tender. If using a regular pan, add about 1-2 cups of water, cover, and cook on low heat for about 1 hour or until the mutton is tender, stirring occasionally and adding more water if needed.
- Once the mutton is cooked and the desired consistency is achieved, garnish the Chettinad Mutton Curry with fresh curry leaves and coriander leaves.
