Butter Murukku is a popular South Indian snack known for its crisp texture and rich, buttery flavor. It’s made using rice flour, urad dal flour, and of course, butter. Here’s the recipe:
Preparation Time: 15 minutes
Cooking Time: 30-40 minutes
Total Time: 45-55 minutes
Ingredients:
- 2 cups rice flour
- 1/2 cup urad dal (black gram) flour
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon sesame seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Water, as needed
- Oil for deep frying
Instructions:
- Prepare the Flours: Roast the urad dal until it turns light golden and gives off a nutty aroma. Allow it to cool and then grind it into a fine powder to make urad dal flour.
- Prepare the Dough: In a mixing bowl, combine rice flour, urad dal flour, melted butter, sesame seeds, asafoetida, and salt. Mix well.
- Knead the Dough: Gradually add water and knead the mixture into a smooth and pliable dough. The dough should be firm and not too soft.
- Shape the Murukku: Take a portion of the dough and place it in a murukku press or chakli maker fitted with the desired star-shaped plate.
- Heat Oil: Heat oil in a deep frying pan or kadai over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil; it should sizzle and rise to the surface.
- Fry the Murukku: Carefully press the murukku maker over the hot oil in a circular motion to form spiral shapes. Fry the murukku until they turn golden brown and crisp. Fry them in batches, but avoid overcrowding the pan.
- Drain and Cool: Use a slotted spoon to remove the fried murukku from the oil. Place them on paper towels to drain excess oil and cool.
- Repeat: Repeat the process with the remaining dough.
- Store: Once the butter murukku have completely cooled, store them in an airtight container.
Cook’s Tips:
- Ensure that the dough is kneaded well; any cracks or inconsistencies can cause the murukku to break during frying.
- You can adjust the level of spiciness by adding more or less sesame seeds and asafoetida.
- The murukku will become crispier as they cool down.
Enjoy: Butter Murukku is a delightful snack that’s perfect with a cup of tea or coffee. Its rich buttery flavor and crunchy texture make it a favorite among both kids and adults.
