  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (optional)
  • Salt to taste
  • Water, as needed
  • Oil or ghee for cooking
Instructions:
  1. In a mixing bowl, combine besan, cumin seeds, turmeric powder, red chili powder (if using), and salt.
  2. Gradually add water to the besan mixture while whisking continuously to make a smooth batter. The consistency should be slightly thicker than that of dosa or pancake batter.
  3. Add the chopped onions, tomatoes, bell peppers, coriander leaves, and green chili (if using) to the batter. Mix well to combine.
  4. Heat a non-stick or cast-iron skillet over medium heat. Drizzle a little oil or ghee and spread it evenly.
  5. Pour a ladleful of the besan batter onto the center of the skillet and spread it gently in a circular motion to form a thin pancake-like shape.
  6. Drizzle a little oil or ghee around the edges of the chilla and on top.
  7. Cook the chilla on medium heat until the bottom turns golden brown and crisp. Flip it over and cook the other side until it is cooked through and lightly browned.
  8. Remove the cooked chilla from the skillet and transfer it to a serving plate.
  9. Repeat the process with the remaining batter to make more chillas, adding oil or ghee as needed.
  10. Serve the Besan Chillas hot with chutney, yogurt, or any preferred accompaniment.
