Preparation time: 10 minutes
Cooking time: 15 minutes
Ready in: 25 minutes
Ingredients:
- 1 cup besan (gram flour)
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1/4 cup finely chopped bell peppers (capsicum)
- 2 tablespoons chopped coriander leaves
- 1 green chili, finely chopped (optional)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- Salt to taste
- Water, as needed
- Oil or ghee for cooking
Instructions:
- In a mixing bowl, combine besan, cumin seeds, turmeric powder, red chili powder (if using), and salt.
- Gradually add water to the besan mixture while whisking continuously to make a smooth batter. The consistency should be slightly thicker than that of dosa or pancake batter.
- Add the chopped onions, tomatoes, bell peppers, coriander leaves, and green chili (if using) to the batter. Mix well to combine.
- Heat a non-stick or cast-iron skillet over medium heat. Drizzle a little oil or ghee and spread it evenly.
- Pour a ladleful of the besan batter onto the center of the skillet and spread it gently in a circular motion to form a thin pancake-like shape.
- Drizzle a little oil or ghee around the edges of the chilla and on top.
- Cook the chilla on medium heat until the bottom turns golden brown and crisp. Flip it over and cook the other side until it is cooked through and lightly browned.
- Remove the cooked chilla from the skillet and transfer it to a serving plate.
- Repeat the process with the remaining batter to make more chillas, adding oil or ghee as needed.
- Serve the Besan Chillas hot with chutney, yogurt, or any preferred accompaniment.
