Ingredients:
- 3 medium-sized beets
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Wash the beets thoroughly and trim the tops and tails. Wrap them in aluminum foil and place them on a baking sheet.
