Ingredients:
For the beetroot koftas:
  • 2 cups grated beetroot
  • 1 cup boiled and mashed potatoes
  • 1/4 cup besan (gram flour)
  • 2 tablespoons cornflour
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for deep frying
For the gravy:
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1/4 cup fresh cream
  • Fresh coriander leaves for garnish
Instructions:
  1. In a mixing bowl, combine the grated beetroot, mashed potatoes, besan, cornflour, ginger-garlic paste, red chili powder, garam masala, and salt. Mix well to form a dough-like consistency.
  2. Shape the mixture into small round balls or koftas.
  3. Heat oil in a deep pan or kadai. Deep fry the koftas in batches until they turn golden brown and crisp. Remove them using a slotted spoon and place them on a paper towel to absorb excess oil. Set aside.
  4. In a separate pan, heat oil or ghee over medium heat. Add cumin seeds and let them splutter.
  5. Add the chopped onions and sauté until they turn golden brown.
  6. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  7. Add the tomato puree and cook until the oil separates from the mixture.
  8. Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
  9. Add fresh cream and mix well to incorporate it into the gravy. Cook for a minute.
  10. Add water to adjust the consistency of the gravy. Simmer for 5 minutes.
  11. Gently place the prepared beetroot koftas into the gravy. Cover and cook for 5-7 minutes on low heat to allow the koftas to absorb the flavors of the gravy.
  12. Garnish with fresh coriander leaves.
  13. Serve the Beetroot Kofta Gravy hot with roti, naan, or rice.

The Beetroot Kofta Gravy is a delightful vegetarian dish that combines the earthy sweetness of beetroot with the rich flavors of the tomato-based gravy.
