Ingredients:
  • 2 ripe bananas, mashed
  • 1 cup rice flour
  • 1/4 cup jaggery or sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of salt
  • Water, as needed
  • Oil or ghee for frying
Instructions:
  1. In a mixing bowl, combine the mashed bananas, rice flour, jaggery or sugar, cardamom powder, and a pinch of salt. Mix well to form a thick batter.
  2. Gradually add water to the batter, a little at a time, and mix well until you achieve a smooth and thick consistency. The batter should be thicker than dosa batter but still pourable.
  3. Heat a paniyaram pan or appam pan on medium heat and add a few drops of oil or ghee into each cavity.
  4. Pour a spoonful of the banana batter into each cavity of the pan, filling it up to 3/4th.
  5. Allow the appams to cook on medium-low heat until the bottom side turns golden brown and crispy. Then, flip each appam using a wooden skewer or fork.
  6. Cook the other side until it becomes golden brown and crispy as well.
  7. Remove the appams from the pan and place them on a plate lined with a paper towel to absorb any excess oil or ghee.
  8. Repeat the process with the remaining batter until all the appams are cooked.
  9. Serve the Banana Appams warm as a snack or dessert. They can be enjoyed on their own or with a cup of tea or coffee.

Note: You can add additional ingredients like grated coconut, cardamom powder, or chopped nuts to the batter for extra flavor and texture. Adjust the sweetness of the appams by adding more or less jaggery or sugar, according to your taste preference.
