Kadai Paneer is a popular North Indian dish made with paneer (Indian cottage cheese), bell peppers, and a blend of aromatic spices. It is a flavorful and spicy curry that is typically enjoyed with naan, roti, or rice. Here’s the recipe:

Ingredients:
  • 250 grams paneer, cut into cubes
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 1 green bell pepper, cut into cubes
  • 1 red bell pepper, cut into cubes
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dried fenugreek leaves (kasuri methi)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnishing
Instructions:
  1. Dry roast the coriander seeds and cumin seeds in a pan until fragrant. Allow them to cool and then grind them into a fine powder.
  2. Heat oil in a kadai or a wide pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell of ginger-garlic disappears.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add the powdered spices – coriander-cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a couple of minutes until the spices are well combined.
  6. Add the cubed bell peppers and cook for a few minutes until they become slightly tender.
  7. Add the paneer cubes to the pan and gently mix them with the masala and bell peppers. Cook for a couple of minutes until the paneer absorbs the flavors.
  8. Crush the dried fenugreek leaves (kasuri methi) between your palms and sprinkle them over the paneer. Mix well.
  9. Cook for a few more minutes until everything is well combined and the paneer is cooked through.
  10. Garnish with fresh coriander leaves and turn off the heat.

Kadai Paneer is now ready to be served. It pairs well with naan, roti, or rice. Enjoy this flavorful and spicy paneer dish as a main course in your meal.
