Ingredients:
- 2 cups rice flour
- 1/2 cup besan (gram flour)
- 2 tablespoons butter, melted
- 1 teaspoon cumin seeds
- 1/2 teaspoon sesame seeds
- 1/2 teaspoon ajwain (carom seeds)
- 1/2 teaspoon red chili powder
- A pinch of asafoetida (hing)
- Salt to taste
- Water as needed
- Oil for deep frying
Instructions:
- In a mixing bowl, combine rice flour, besan, melted butter, cumin seeds, sesame seeds, ajwain, red chili powder, asafoetida, and salt. Mix well to combine all the ingredients.
- Gradually add water, a little at a time, and knead the mixture into a smooth and pliable dough. The dough should be firm yet soft.
- Take a small portion of the dough and shape it into a cylindrical log. Place the log inside a chakli maker or a murukku press fitted with a chakli disc.
- Heat oil in a deep frying pan or kadai over medium heat.
- Squeeze the chakli maker to press out the dough in a circular motion, forming spiral-shaped chakli on a greased surface or directly into the hot oil. Make sure not to overcrowd the pan.
- Fry the chakli in hot oil until golden brown and crispy. Flip the chakli occasionally to ensure even frying.
- Once cooked, remove the chakli from the oil using a slotted spoon and drain excess oil on a kitchen paper towel.
- Allow the chakli to cool completely and store them in an airtight container.
- Repeat the process with the remaining dough to make more chakli.
Chakli can be enjoyed as is or with a cup of hot tea or coffee. They make for a perfect crunchy snack that can be savored at any time of the day.
