Ingredients:
  • 500 grams boneless lamb, cut into cubes
  • 3 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 2 teaspoons ginger paste
  • 2 teaspoons garlic paste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chili powder (or paprika for a milder heat)
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup plain yogurt, whisked
  • 2 cups tomatoes, pureed
  • 1 cup water
  • Salt to taste
  • Fresh cilantro leaves, for garnish
Instructions:
  1. Heat the vegetable oil in a large, heavy-bottomed pan over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger paste and garlic paste to the pan. Cook for about a minute until fragrant.
  4. In a small bowl, mix together the ground cumin, ground coriander, turmeric powder, red chili powder, ground cardamom, ground cinnamon, and ground cloves.
  5. Add the spice mixture to the pan and cook for a couple of minutes, stirring continuously to prevent burning.
  6. Add the cubed lamb to the pan and cook until it is evenly browned on all sides.
  7. Reduce the heat to low and add the whisked yogurt to the pan. Stir well to combine.
  8. Add the tomato puree and water to the pan. Season with salt to taste. Stir to combine all the ingredients.
  9. Cover the pan with a lid and let the lamb simmer over low heat for about 1 hour, or until the meat is tender and the flavors are well developed. Stir occasionally and add more water if needed.
  10. Once the lamb is cooked and the gravy has thickened, remove the pan from heat.
