Ingredients:
  • 2 cups whole wheat flour
  • Water for kneading the dough
  • Salt to taste
  • Oil or ghee for cooking
For the egg filling:
  • 4 eggs
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1/4 cup chopped coriander leaves
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
Instructions:
  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a smooth and soft dough. Cover and let it rest for 15 minutes.
  2. In a separate bowl, beat the eggs. Add chopped onions, green chili, coriander leaves, turmeric powder, red chili powder, and salt. Mix well.
  3. Divide the dough into small balls and roll each ball into a small disc.
  4. Place a portion of the egg filling in the center of the disc and fold the edges to seal it, creating a stuffed ball.
  5. Roll out the stuffed ball gently into a flatbread, ensuring that the filling does not spill out.
  6. Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook for a minute or until bubbles start to appear.
  7. Flip the paratha and apply oil or ghee on the surface. Cook for another minute.
  8. Flip again and apply oil or ghee on the other side. Press the paratha gently with a spatula to cook evenly.
  9. Cook until both sides are golden brown and crispy.
  10. Remove the egg paratha from the tawa and repeat the process with the remaining dough and filling.
  11. Serve hot egg parathas with yogurt, pickle, or any preferred side dish.
