Ingredients:
- 4 boiled eggs
- 1 cup mixed vegetables (carrots, beans, drumsticks, potatoes, etc.), chopped
- 1/2 cup grated coconut
- 2 green chilies, slit
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon mustard seeds
- A few curry leaves
- 2 tablespoons oil
- Salt to taste
Instructions:
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves and slit green chilies. Sauté for a minute.
- Add the chopped mixed vegetables and cook until they are tender.
- In the meantime, grind grated coconut and cumin seeds to a smooth paste using a blender or mixer.
- Once the vegetables are cooked, add the coconut paste to the pan.
- Add turmeric powder and salt. Mix well and cook for a couple of minutes.
- Make shallow slits on the boiled eggs and add them to the pan. Gently coat the eggs with the coconut gravy.
- Cover the pan and simmer for 5-10 minutes, allowing the flavors to blend together.
- Remove from heat and garnish with fresh cilantro leaves.
- Serve Mutta Aviyal hot with rice or roti.
