- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 cup fresh cilantro, chopped
- Salt to taste

- Ghee or oil, as needed
Instructions:
- In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft and smooth dough. Cover the dough and let it rest for 15-20 minutes.
- In a separate bowl, combine the mashed potatoes, chopped onion, green chilies, cumin seeds, red chili powder, turmeric powder, garam masala, fresh cilantro, and salt. Mix well to combine all the ingredients and form a smooth filling.
- Divide the dough into equal-sized portions and shape them into small balls.
- Take one dough ball and roll it into a small circle. Place a spoonful of the potato filling in the center of the circle.
- Bring the edges of the dough together to cover the filling and seal it properly. Flatten the stuffed dough ball with your palms.
- Dust the stuffed dough ball with flour and roll it gently into a circular paratha, ensuring that the filling does not come out.
- Heat a tawa or griddle over medium heat. Place the rolled paratha on the hot tawa and cook it on one side until you see small bubbles forming.
- Flip the paratha and apply ghee or oil on the cooked side. Cook for a few seconds, then flip again and apply ghee or oil on the other side.
- Cook the paratha, pressing gently with a spatula, until it turns golden brown and crispy on both sides.
- Remove the cooked paratha from the tawa and place it on a plate. Repeat the process with the remaining dough balls and filling to make more parathas.
- Serve the Aloo Parathas hot with yogurt, pickle, or any chutney of your choice.
