Prep Time: 20 minutes
Marination Time: 30 minutes
Cook Time: 15 minutes
Ready Time: 1 hour 5 minutes

Ingredients:
  • 500 grams fish fillets (such as cod, tilapia, or sole)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 cup besan (gram flour)
  • 2 tablespoons rice flour
  • Salt to taste
  • Oil for deep frying
  • Lemon wedges, for serving
  • Fresh cilantro leaves, for garnish
Instructions:
  1. In a mixing bowl, combine the ginger-garlic paste, lemon juice, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, ajwain, besan, rice flour, and salt. Mix well to form a thick paste.
  2. Add a little water to the paste to make a smooth and thick marinade.
  3. Coat the fish fillets with the prepared marinade, ensuring they are evenly coated. Cover the bowl and let the fish marinate for at least 30 minutes to allow the flavors to infuse.
  4. Heat oil in a deep pan or kadai for deep frying over medium heat.
  5. Once the oil is hot, carefully add the marinated fish fillets to the pan, one at a time. Fry them until they turn golden brown and crispy on both sides. Flip the fish fillets occasionally for even frying.
  6. Remove the fried fish fillets from the pan using a slotted spoon and drain on a paper towel to remove excess oil.
  7. Repeat the process with the remaining marinated fish fillets until all are fried.
  8. Garnish the Amritsari Fish Fry with fresh cilantro leaves.
  9. Serve the fish fry hot with lemon wedges on the side. It can be enjoyed as an appetizer or as a side dish with mint chutney or a tangy dip.

Note: Adjust the spice levels according to your preference. You can also add a pinch of chaat masala or amchur powder for extra tanginess.

This recipe serves approximately 4 servings. Adjust the quantity of ingredients based on your requirements. Enjoy the crispy and flavorful Amritsari Fish Fry!
