Ingredients:
- 250 grams mushrooms, sliced
- 1 large onion, finely chopped
- 2 tomatoes, pureed

- 1/2 cup coconut milk
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2-3 cloves
- 1-inch cinnamon stick
- 2-3 green cardamom pods
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves, for garnish
Instructions:
- Heat oil in a pan or kadai over medium heat. Add the mustard seeds and cumin seeds. Allow them to splutter.
- Add the bay leaf, cloves, cinnamon stick, and cardamom pods to the pan. Sauté for a few seconds until they release their aroma.
- Add the finely chopped onions and green chilies to the pan. Sauté until the onions turn golden brown.
- Add the ginger-garlic paste to the pan and sauté for a minute until the raw smell disappears.
- Add the tomato puree to the pan and cook for a few minutes until the oil separates.
- Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a minute to roast the spices.
- Add the sliced mushrooms to the pan and stir to coat them with the spice mixture. Cook for 3-4 minutes until the mushrooms release their moisture.
