Plain kulfi is a popular Indian frozen dessert that is creamy, rich, and flavored with cardamom. It is similar to ice cream but has a denser and creamier texture. Here is a recipe for plain kulfi:
Prep Time: 10 minutes
Cook Time: 40 minutes
Chilling Time: 6-8 hours
Ready Time: 6 hours 50 minutes – 8 hours 50 minutes
Ingredients:
- 4 cups full-fat milk
- 1/2 cup condensed milk
- 1/4 cup sugar
- 1/4 cup powdered milk
- 1/2 teaspoon cardamom powder
- A few saffron strands (optional)
- Slivered almonds or pistachios for garnish (optional)
Instructions:
- In a heavy-bottomed saucepan, pour the full-fat milk and bring it to a boil over medium heat. Stir occasionally to prevent scorching.
- Once the milk comes to a boil, reduce the heat to low and let it simmer. Stir occasionally to prevent a skin from forming on top.
- Simmer the milk for about 30 minutes or until it reduces to approximately half its original quantity. Stir occasionally to prevent sticking and burning.
- Add the condensed milk, sugar, and powdered milk to the reduced milk. Mix well until all the ingredients are well combined.
- Continue to simmer the mixture for another 10 minutes, stirring continuously to prevent it from sticking to the bottom of the pan.
- Add the cardamom powder and saffron strands (if using). Stir well to incorporate the flavors.
- Remove the pan from heat and let the mixture cool to room temperature.
- Pour the cooled mixture into kulfi molds or small individual serving bowls. If using molds, cover them with aluminum foil or plastic wrap to prevent ice crystals from forming.
- Place the molds or bowls in the freezer and let the kulfi set for at least 6-8 hours, or until firm.
- Once the kulfi is set and ready to serve, remove it from the freezer and let it sit at room temperature for a few minutes to soften slightly.
- If using molds, unmold the kulfi by dipping the molds in warm water for a few seconds and then gently sliding the kulfi out onto a serving plate.
- Garnish the plain kulfi with slivered almonds or pistachios if desired.
- Serve the plain kulfi immediately and enjoy its creamy and refreshing taste.
Note: The preparation time and ready time mentioned above include the chilling time. The actual active cooking time is around 40 minutes.
This recipe makes approximately 6 servings of plain kulfi. Feel free to adjust the quantities based on your preferences. Enjoy the delightful and creamy plain kulfi!
