Ingredients:
  • 1/2 cup Basmati rice
  • 4 cups milk
  • 1/2 cup sugar
  • 1/4 cup ghee (clarified butter)
  • 10-12 cashews
  • 10-12 raisins
  • 1/2 teaspoon cardamom powder
  • A pinch of saffron (optional)
Instructions:
  1. Wash the rice and soak it in water for 30 minutes.
  2. Drain the water from the rice and set it aside.
  3. Heat the ghee in a heavy-bottomed pan and add the cashews and raisins. Fry until they turn golden brown.
  4. Remove the cashews and raisins from the pan and set them aside.
  5. In the same pan, add the drained rice and sauté for a few minutes.
  6. Add 4 cups of milk to the pan and bring it to a boil.
  7. Reduce the heat to low and let the rice simmer for about 20-25 minutes, or until it is cooked and the milk has thickened.
  8. Add the sugar to the pan and stir until it dissolves.
  9. Add the fried cashews, raisins, cardamom powder, and saffron (if using) to the pan. Mix well.
  10. Let the payasam simmer for another 2-3 minutes.
  11. Remove the pan from heat and let the payasam cool for a few minutes.
  12. Serve warm or chilled, garnished with additional cashews and raisins.
